
Indian Dal Soup
Ingredients
- 2 tablespoons olive oil
- 1 large white onion, diced
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- ½ teaspoon cayenne pepper
- 2 teaspoons turmeric
- 2 teaspoons coriander
- 2 teaspoons cumin
- 2 teaspoons garam masala
- 1 tablespoon salt
- 8 cups water
- 1½ cups dried brown lentils
- 1 (15 ounce) can unsalted, diced tomatoes
- ¾ cup nonfat, plain Greek yogurt
- ½ cup chopped cilantro
Directions
- Heat oil in a large pot. Add onions and saute until translucent.
- Add spices and cook about 2 minutes. Stir in water and lentils and bring to a boil.
- Simmer, partially-covered, until the lentils are tender—about 45 minutes.
- Add tomatoes and cook about 15 minutes. Adjust seasonings to taste.
- Top each bowl with 2 tablespoons of yogurt and 1-2 tablespoons cilantro.
