
Lemon Chicken Orzo Soup
Ingredients
- 1 tablespoon olive oil
- 1 white onion, diced
- 2 cloves garlic, minced
- 2 cups chopped carrots
- 2 cups chopped celery
- 8 cups low sodium. fat free chicken broth
- 2 lemons, (zest, then juice)
- 1 bay leaf
- 1½ cups orzo pasta, dry
- 2 cups shredded chicken, cooked
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions
- In a large pot, heat olive oil. Add onions, garlic, carrots, and celery. Sauté until vegetables are tender and the onions start to turn translucent.
- Add chicken broth, lemon zest, lemon juice, and bay leaf. Heat to a boil.
- Add orzo and cook on high for about 8-10 minutes or until orzo is tender.
- Add chicken and cook another 5-10 minutes.
- Remove bay leaf and season with salt and pepper. Enjoy!
