
Light Chicken Parmesan
Ingredients
- ½ cup panko
- ¼ cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 pound chicken breasts - thinly sliced
- 1 egg, beaten
- 1 cup marinara sauce
- ½ cup shredded, part-skim mozzarella cheese
Directions
- Stir together the panko, Parmesan, and Italian seasoning.
- Preheat the oven to 450°F. Grease a large baking sheet.
- Dip each piece of chicken in the egg and then in the panko mixture, so both sides are coated. Place on the baking sheet and spray with cooking spray.
- Bake for 25 minutes. Remove from the oven. Top each chicken breast with marinara sauce, then sprinkle with cheese. Broil for 5 minutes.
