
Lightened Broccoli Salad
Ingredients
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- 2 tablespoons reduced-fat mayonnaise with olive oil
- ⅔ cup nonfat, plain Greek yogurt
- ½ teaspoon salt
- ½ teaspoon freshly ground pepper
- 5 cups broccoli florets, halved
- ½ cup sliced, unsalted almonds
- ½ cup dried cranberries
- ½ cup sunflower seeds
- ¼ cup diced red onion
Directions
- In a small bowl, whisk vinegar, sugar, mayo, yogurt, salt, and pepper until smooth.
- In a large bowl, mix broccoli, almonds, cranberries, sunflower seeds, and red onion.
- Toss with dressing and refrigerate for 30 minutes before serving.
