
Mediterranean 7-Layer Dip
Ingredients
- 8 ounces hummus
- 1 tomato, diced
- ½ cup cucumber, diced
- ½ cup nonfat Greek yogurt
- ⅛ teaspoon salt
- ¼ teaspoon paprika
- 1 (14.5-ounce) jar artichoke hearts, drained and chopped
- 2 red bell peppers, diced
- ¼ cup crumbled feta cheese
- 2 tablespoons flat-leaf parsley, minced
- 2 tablespoons Kalamata olives, chopped (optional)
Directions
- In an 8x8” pan, spread out the hummus.
- Add the diced tomatoes and cucumber.
- Spread out the yogurt evenly over the vegetables.
- Sprinkle with salt and paprika.
- Top with artichoke, red peppers, and feta cheese.
- Sprinkle with parsley and olives.
- Keep refrigerated until serving.
- Just before serving, cut into 16 portions.
- Serve with fresh vegetables, pita chips, or crackers.
