
Mediterranean Arugula Salad
- 1 large tomato, diced
- ½ cup low-sodium garbanzo beans
- 4 Kalamata olives, sliced
- 1 green onion, diced
- ½ tablespoon olive oil
- 1 tablespoon balsamic vinegar
- ¼ teaspoon garlic powder
- 4 cups arugula
- ½ cup cooked couscous
Directions
- Mix tomato, beans, Kalamata olives, green onion, olive oil, balsamic vinegar, and garlic powder together. (This can be used immediately or allowed to marinate overnight.)
- Top arugula with couscous and tomato mixture. Enjoy!
