
Paleo Southwestern Meatballs
Ingredients
- 1 jalapeño
- 1 pound ground beef (95% lean)
- 1 egg
- ½ teaspoon garlic powder
- 1 teaspoon cumin
- ¼ teaspoon salt
- ½ teaspoon onion powder
- ⅓ cup cilantro
- ¼ red bell pepper, diced
- ⅓ cup flax meal
Directions
- Devein jalapeño, then remove and discard seeds. Dice remaining jalapeño.
- Mix together all ingredients in a large bowl until evenly incorporated.
- Preheat the oven to 400°F.
- Line a baking sheet with foil.
- Using a cookie scoop (or by hand), form the meat mixture into 24 balls.
- Place on the baking sheet. Bake for 15 minutes.
