
Savory Stuffed Tomatoes
Ingredients
- 8 large tomatoes, tops and cores removed
- 1 cup brown rice, cooked
- ¼ cup fresh basil, chiffonade
- 4 ounces mozzarella cheese, cut into small cubes
- 1 pound asparagus, trimmed and sliced into ½-inch pieces
- 1 (15-ounce) can garbanzo beans, drained and rinsed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ cup grated Parmesan cheese
Directions
- Preheat the oven to 350°F. Grease a baking sheet. Place the cored tomatoes on the sheet.
- In a bowl, mix the cooked rice with the basil, mozzarella, asparagus, beans, garlic powder, onion powder, and salt. Stuff the tomatoes with the rice mixture, then top with Parmesan cheese.
- Bake for 30 minutes. Enjoy!
