
Slow Cooker Beef and Barley Stew
Ingredients
- 1 sweet potato, peeled and cubed
- 1 onion, chopped
- 3 stalks celery, chopped
- 4 carrots, diced
- 1 leek, washed, halved, and sliced
- 1½ pounds stew beef
- 1 cup barley
- 8 cups unsalted beef broth
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon curry powder
- 1 teaspoon dried thyme
- 3 cups water
Directions
- Combine all ingredients in a large slow cooker.
- Cook on high for 6 hours or on low for 8 hours.
