
Slow Cooker Pork Carnitas
Ingredients
- ¾ cup freshly squeezed orange juice
- ¼ cup freshly squeezed lime juice
- 1 teaspoon garlic powder
- 1 sweet onion, sliced
- 2 pounds pork roast
- ½ tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 12 corn tortillas
- ¼ cup cilantro, chopped
- 1 avocado, sliced thin
- ¾ cup salsa verde
Directions
- In the slow cooker, combine orange juice, lime juice, garlic, and onion slices.
- Place the pork on top of the onion slices.
- In a small bowl, combine seasonings. Sprinkle on top of pork roast until completely covered.
- Cook on low for 8 hours or on high for about 5 hours until meat is fully cooked.
- Remove the pork roast from the slow cooker and place on a cutting board.
- Shred with two forks, then return to slow cooker.
- Serve hot in a corn tortilla with about 2 ounces of pork, 1 teaspoon cilantro, 1/12 of avocado, and 1 tablespoon salsa verde.
