
Slow Cooker Savory Beef Roast
Ingredients
- 1 white onion, cut into chunks
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- ¾ teaspoon paprika
- ½ teaspoon salt
- 4 cloves garlic, minced
- ½ teaspoon ground coriander
- 3 pound lean chuck roast
- 1 (4-ounce) can green chilies
- ¼ cup fresh lime juice
- ⅓ cup chicken broth
Directions
- Line the bottom of the slow cooker with the onions.
- In a small dish, combine the chili powder, cumin, paprika, salt, garlic, and coriander. Rub the roast with the spice blend.
- Place the seasoned roast on top of the onions. Pour in the green chilies, lime juice and broth.
- Cook on high for 6 hours or on low for 8 hours.
- Remove and shred before serving.
