
Smoked Sweet Potato Sliders
Ingredients
- 2 large sweet potatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1½ cups brown rice, cooked
- ½ cup walnut meal
- ½ cup green onions, diced
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon chipotle pepper
- 18 whole wheat slider buns (or 9 whole wheat regular buns)
Toppings
- 2 avocados, thinly sliced
- 6 romaine leaves, cut into thirds
- ½ red onion, thinly sliced
- 4 tomatoes, thinly sliced
Directions
- Pierce the sweet potatoes with a fork, then microwave for 10 minutes or until cooked through.
- Scoop out the sweet potatoes, then add them to a medium mixing bowl.
- Add in black beans.
- Mash together until about ½ of the black beans are mashed.
- MIx in brown rice, green onions, walnut meal, and spices. The mixture will be moist.
- Line a baking sheet with plastic wrap.
- Using about ¼ cup of the mixture, form into 18 patties (9 if you’re doing medium-sized burgers), then place on lined baking sheet.
- Freeze patties for about 15 minutes to help them stay together on the smoker or grill.
- Place on smoker or grill and cook on medium-high heat for 15–20 minutes on each side.
- Remove from smoker or grill, then assemble the sliders with avocado, lettuce, onions, tomatoes, and any other toppings you’d like!
