
Southwestern Meatballs
Ingredients
- 1 pound ground chicken
- 1 jalapeño, veins and seeds removed and diced
- 1 egg
- 1 teaspoon garlic powder
- 1 tablespoon cumin
- 1 teaspoon salt
- 1 teaspoon onion powder
- ¼ cup cilantro
- 1 bell pepper, diced
- ½ cup plain bread crumbs
Directions
- Mix together all ingredients in a large bowl until evenly incorporated.
- Preheat the oven to 400°F and line a baking sheet with foil.
- Using a cookie scoop (or by hand), form the meat mixture into 24 balls and bake for 15 minutes.
