
Spicy Chicken and Hominy
Ingredients
- 1 tablespoon olive oil
- 1 white onion, diced
- 1 red bell pepper, diced
- 1 jalapeño, diced
- 2 cloves garlic
- 1 (15-ounce) can unsalted diced tomatoes, with liquid
- 2 cups hominy
- 2 pounds shredded chicken
- ½ teaspoon salt
- ½ teaspoon ground cumin
Directions
- In a medium skillet, heat the olive oil. Sauté the onion for 5 minutes. Add the peppers and cook for an additional 5 minutes.
- Add the remaining ingredients and sauté until thoroughly cooked.
