
Twice-baked Sweet Potatoes
Ingredients
- 3 sweet potatoes
- ⅔ cup nonfat, plain Greek yogurt
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 1 cup chopped broccoli, frozen
- ¾ cup shredded Parmesan, divided
Directions
- Pierce the potatoes with a fork and microwave in 2-minute intervals until tender (about 6-8 minutes).
- Cut each potato in half. Scoop out about ¾ of the flesh into a large bowl.
- Mash the potatoes with the Greek yogurt, salt, onion powder, paprika, and garlic powder. Mix in the broccoli and ½ cup Parmesan cheese.
- Divide the mixture amongst the potato skins and sprinkle with the remaining ¼ cup Parmesan.
- Bake at 400°F for 10-15 minutes.
