
Vegan Caesar Salad
Ingredients
- 1 (15-ounce) canned chickpeas, drained and rinsed
- ½ cup roasted cashews
- 6 cups romaine lettuce, chopped
- 6 cups spinach, chopped (I used large leaves)
Dressing
- ½ cup raw cashews, soaked overnight
- ¼ cup water
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ½ tablespoon Dijon mustard
- 1–2 cloves garlic
- ½ tablespoon vegan Worcestershire sauce
- 2 teaspoons capers, drained and rinsed
- ¼ teaspoon salt
- ½ teaspoon black pepper
Directions
- Add all the dressing ingredients into a food processor or blender, then blend until smooth.
- Toss dressing with romaine, spinach, chickpeas, and cashews.
- Serve cold.
