
Veggie Turkey Chili
Ingredients
- 1 pound lean ground turkey
- 1 yellow onion, diced
- 2 large carrots, diced
- 1 zucchini, diced
- 1 red pepper, diced
- 1 (15-ounce) can low-sodium kidney beans
- 1 (15-ounce) can low-sodium pinto beans
- 1 (15-ounce) can low-sodium black beans
- 2 (14.5-ounce) cans no-salt-added, diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 tablespoon cocoa powder
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
Directions
- Brown the turkey in a large stockpot with the onion. Add the carrot and continue to cook for 3-4 more minutes.
- Add the zucchini, pepper, beans, tomatoes, tomato sauce, and seasonings. Bring to a simmer over medium heat.
- Cover and let simmer for 20-30 minutes.
