
White Bean Chicken Chili
Ingredients
- 1 tablespoon olive oil
- 1 pound chicken, cut into small pieces
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 5 cups kale, chopped
- 1 teaspoon paprika
- ½ teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 (15-ounce) cans low-sodium white beans (with liquid)
- 1 (15-ounce) can unsalted, diced tomatoes, drained
- 3 cups low-sodium chicken broth
- 1 cup water
Directions
- Heat the olive oil in the bottom of a large stockpot.
- Add the chicken, onion, and garlic.
- Add the kale and spices.
- Sauté until the kale begins to wilt.
- Add the beans, tomatoes, broth, and water.
- Allow the soup to simmer for 30-45 minutes.
