
Whole Grain Burger Buns
Ingredients
- ¼ cup water
- 1 tablespoon dry, active yeast
- 1 cup 1% milk, warmed
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 eggs
- 3 cups whole wheat pastry flour
- 2 tablespoons rolled oats
Directions
- Preheat oven to 350°F.
- In the bowl of a stand mixer, combine the water and yeast. Let sit for five minutes, or until the yeast is activated and the mixture looks foamy.
- Add the milk, sugar, salt, and 1 egg. Blend.
- Mix on low speed and gradually add in the whole wheat flour in ½-cup increments until the dough begins to pull away from the sides of the bowl. You may not need all of the flour. The dough should be sticky, but workable.
- Knead for 5 minutes in the mixer.
- Let stand for 10 minutes.
- With floured hands, divide into 6 balls, then place on a parchment-lined cookie sheet.
- Separate the yolk and white of the remaining egg.
- Mix the yolk with 1 tablespoon of water, then use it to brush the tops of the buns.
- Sprinkle with oats.
- Bake for 20 minutes or until golden brown.
