Ingredients
- ½ cup low-sodium tomato sauce
- 8 whole wheat tortillas (gluten-free, if needed)
- 1 cup diced meat of choice (optional)
- 1-2 cups diced veggies of choice*
- 1 cup shredded part-skim mozzarella cheese
Directions
- Spread 1 tablespoon low-sodium tomato sauce on each tortilla.
- Top with 2 tablespoons meat (if using) and 2-4 tablespoons of veggies.
- Sprinkle 2 tablespoons mozzarella cheese on top. Wrap up like a burrito and microwave for 1 minute until cheese is melted. Enjoy!
- These also freeze well. To freeze, lay each wrap on a cookie sheet and place in a freezer overnight. The next day, transfer to an airtight container. To heat, wrap in a paper towel and microwave for 3 minutes or until cheese is melted.
*Recommend green or purple onions, bell peppers, mushrooms, and spinach.
