Pumpkin Parfaits

I love parfaits. They’re such a easy breakfast, and so delicious! However, eating the same thing every morning gets old quickly, which is why I like to adapt along with the seasons. So now that fall is officially here, I’m all about pumpkin...and loving these pumpkin parfaits! So if you’re a pumpkin lover, give this fun, new twist a try.

          Directions
          1. Preheat oven to 350°F.
          2. Mix together eggs, lemon juice, milk, syrup, and spices until smooth. Pour into a greased 9×13” pan.
          3. Bake for 30 minutes until set.
          4. Place in the fridge to cool for 10–20 minutes.
          5. Once cooled, assemble parfaits.
          6. Each parfait should have ⅛ of the pumpkin bake, ¼ cup yogurt, 1 tablespoon granola, and ½ tablespoon pumpkin seeds. Enjoy!
