Rosemary Beef Kabobs

These kabobs are easy to make and delicious to eat! Steak and potatoes are an iconic pair for good reason—the vitamin C in potatoes helps you better absorb the iron in the steak. Balsamic vinegar and rosemary make an incredible combination for the steak to be marinated in. These kabobs may seem simple, but they’re loaded with flavor. Pair with grilled veggies or a fresh salad for a healthy meal.

          Directions
          1. Bring a pot of water to a boil. Add the potatoes and cook for 10 minutes. They should be too stiff to make mashed potatoes, but tender when pierced with a fork.
          2. Whisk together all the marinade ingredients. Drizzle ¼ cup of the marinade over the potatoes. Set aside.
          3. Pour the remaining marinade over the sirloin cubes and allow to sit at room temperature for 20 minutes.
          4. Preheat a grill to medium-high heat.
          5. Alternate the meat and potatoes on skewers. Grill for 8-10 minutes, turning halfway through.
