Spicy Southwest Chicken Salad

Ingredients

  • 4 ounces grilled chicken, cut into strips
  • 4 cups leafy greens
  • ½ cup cooked black beans
  • ½ cup cooked corn
  • 1 cup cherry tomatoes
  • ¼ cup green onions
  • ¼ cup cilantro
  • 2 tablespoons Jalapeno Vinaigrette

Jalapeño Vinaigrette

  • 1 jalapeño pepper
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon water
  • ¼ teaspoon salt
  • ⅓ cup olive oil

 
Directions

  1. First make the vinaigrette.
  2. Remove the top and seeds from the jalapeño.
  3. Chop the jalapeño coarsely and add to a small bowl or cup.
  4. Add the remaining vinaigrette ingredients and blend with the chop attachment on an immersion
  5. blender until smooth.
  6. Slice grilled chicken into thin strips.
  7. Chop veggies and heat up beans and corn if desired.
  8. Toss with dressing and enjoy!

Ingredients 4 cups leafy greens 1 small apple, chopped 1 cup grapes, halved ½ cup chopped celery 2 tablespoons chopped walnuts 1 ounce feta cheese, crumbled 2 tablespoons Strawberry Vinaigrette Strawberry Vinaigrette ¾ cup fresh strawberries 1 teaspoon Dijon mustard ¼ teaspoon salt ⅓ cup olive oil 1 tablespoon red wine vinegar 3 tablespoons apple cider vinegar Directions First make the dressing. Ingredients 1 pound chicken breast ½ cup Frank’s RedHot sauce ½ cup ranch dressing (Whole30-compliant), plus extra for serving* 1 tablespoon olive oil 2 large sweet potatoes, diced 1–2 heads romaine lettuce Directions Place chicken and hot sauce in a slow cooker. Cook on low for 8 hours or high for about 4 hours—until the chicken shreds easily. Shred chicken, then place back in the warm slow cooker on low. Mix in the ranch and keep warm until ready to use.
