Whole30® Buffalo Chicken Lettuce Wraps

This recipe was honestly created out of laziness. I’d already made some buffalo chicken and intended to put inside of baked sweet potatoes and serve them with a side salad. I was also tired and hungry, so I sautéed some sweet potatoes and intended to just put the chicken over them. However, I still wanted more veggies, so inside of the lettuce leaves it went. The spicy chicken and the cool lettuce with little bites of sweet potato made the dinner I was dreading to make into one I wanted to make again and again! Serve with extra ranch, if you’d like.

          Directions
          1. Place chicken and hot sauce in a slow cooker.
          2. Cook on low for 8 hours or high for about 4 hours—until the chicken shreds easily.
          3. Shred chicken, then place back in the warm slow cooker on low.
          4. Mix in the ranch and keep warm until ready to use.
          5. Heat olive oil in a skillet, then sauté sweet potatoes until tender—about 5–10 minutes.
          6. Add sweet potatoes to chicken.
          7. Divide chicken potato mixture into 4 bowls.
          8. Allow each person to assemble lettuce wraps as desired, some may like more filling while others like less, so you may need 1–2 heads of romaine, depending on preferences.
          9. Top with additional ranch, if desired.
