Teff Flatbread

Have you ever tried teff bread? It’s a sour, fluffy bread that’s very popular in Ethiopia. It normally takes days to ferment, but with yogurt and club soda, you can speed up the process and create a delicious, light bread! It goes well with many dishes, but my favorite is to serve it with a spicy red lentil stew for a full Ethiopian meal.

          Directions
          1. In a medium-sized bowl, combine all dry ingredients.
          2. In a small bowl, whisk together the club soda and yogurt until smooth.
          3. Add the yogurt mixture to the dry ingredients, then whisk until smooth.
          4. Coat a large skillet with cooking spray.
          5. Warm over medium-high heat
          6. Pour ⅓ cup of batter into the center of pan. Tip the pan around until the batter coats the bottom.
          7. Cover pan, then cook for 30 seconds.
          8. Flip over, then cook for an additional 30 seconds.
          9. Remove from the pan and place on a plate. Cover with a towel.
          10. Repeat until you’ve used up all the batter. Serve with chutney or lentils.
