Turkey Arepas

Ingredients

  • 2 cups yellow arepa flour
  • 1 teaspoon salt, divided
  • 2 cups hot water
  • 2 tablespoons canola oil, divided
  • 1 cup onion, finely chopped
  • 1 cup green bell pepper, finely chopped
  • 1 jalapeño deseeded, minced
  • ½ teaspoon cumin seeds
  • 2 garlic cloves, minced
  • 2 cups leftover, cooked turkey breast, chopped
  • ¼ cup fresh cilantro, chopped
  • ½ teaspoon black pepper
  • ⅓ cup reduced fat sharp white cheddar cheese, shredded

Directions

  1. Preheat oven to 400°F.
  2. Combine flour and ½ teaspoon salt, then stir.
  3. Stir in hot water until smooth.
  4. Allow the dough to rest for ten minutes, then divide into 12 equal portions, shaping them into individual balls.
  5. Flatten the dough balls into 3-inch circles.
  6. In a large skillet, over medium-high heat, warm 1½ teaspoons of oil.
  7. Place 6 arepas in the pan.
  8. Cook for two minutes on each side, or until golden brown.
  9. Repeat with more oil until all arepas are done.
  10. Place the cooling arepas on a baking sheet.
  11. Bake at 400°F for 20 minutes, or until arepas sound hollow when tapped.
  12. While the arepas baking, prepare the filling.
  13. Heat up remaining 1 tablespoon oil up in a large skillet over medium-high heat.
  14. Add onion and bell pepper.
  15. Cook for 5 minutes or until onion is translucent.
  16. Add jalapeño, cumin seeds, and garlic.
  17. Cook for an additional 2 minutes, stirring frequently.
  18. Add in the remaining ½ teaspoon salt, turkey, cilantro, and pepper.
  19. Remove from heat, then stir in the shredded cheese.
  20. Remove the arepas from the oven, then cut a 3-inch slit in the side.
  21. Stuff each arepa with the turkey filling. Enjoy warm.

Ingredients 1 pound chicken breast ½ cup Frank’s RedHot sauce ½ cup ranch dressing (Whole30-compliant), plus extra for serving* 1 tablespoon olive oil 2 large sweet potatoes, diced 1–2 heads romaine lettuce Directions Place chicken and hot sauce in a slow cooker.
