Vegetarian Cobb Salad

Cobb salad is a popular choice at many restaurants. However, they typically contain a lot of calories. In this recipe, to save on calories, we skipped the bacon and used a homemade dressing. We used a little honey and mustard to get that classic flavor, and then added nonfat Greek yogurt, so we could enjoy this yummy salad dressing with less fat and calories. It’s a very simple dressing to whip it up, and it tastes great on this light cobb salad!

    Creamy Honey Mustard Dressing

          Add ingredients to list

          1. Chop veggies and hard boiled egg.
          2. Shred cheese over chopped veggies.
          3. Add all dressing ingredients to a small bowl or cup and blend with an immersion blender using the whip attachment. This also blends easily with a fork. However, an immersion blender works better.
          4. Toss salad with dressing and enjoy!
