
Vegetarian Cobb Salad
Ingredients
- 3 cups leafy greens
- 1 cup shredded cabbage
- ¾ cup cherry tomatoes, halved
- ¼ cup cooked corn kernels
- ½ cup diced avocado
- 1 hard-boiled egg, diced
- ¼ cup shredded cheddar cheese
- 2 tablespoons Creamy Honey Mustard Dressing
Creamy Honey Mustard Dressing
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 tablespoon nonfat, plain Greek yogurt
- ¼ teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
Directions
- Chop veggies and hard boiled egg.
- Shred cheese over chopped veggies.
- Add all dressing ingredients to a small bowl or cup and blend with an immersion blender using the whip attachment. This also blends easily with a fork. However, an immersion blender works better.
- Toss salad with dressing and enjoy!
