
Vegetarian Pad Thai Salad
Ingredients
- 3 cups leafy greens
- 1 cup shredded cabbage
- 2 tablespoons chopped green onions
- ½ cup sprouts (optional)
- 2 tablespoons Pad Thai Dressing
- ½ cup no-sugar-added, canned Mandarin oranges
- 2 tablespoons minced cilantro
- ½ lime
Pad Thai Dressing
- 3 tablespoons lime juice
- 2 tablespoons soy sauce (gluten-free if needed)
- ½ tablespoon Sriracha (more or less to taste)
- 1½ tablespoons brown sugar
- 1 tablespoon water
- ½ tablespoon light olive oil
Directions
- Chop or shred leafy greens, cabbage, green onions, and sprouts and mix in a medium bowl.
- Mix all dressing ingredients together until fully incorporated. Store extra in the fridge.
- Toss salad with Mandarin oranges and Pad Thai Dressing and top with minced cilantro.
- Squeeze ½ of a lime over the top and enjoy!
