Whole30® BLT Zoodles

This was one of my favorite dishes while on Whole30. I just whipped it up one day when my family was craving BLTs. After our first bite, we agreed...it was amazing! We wanted to eat this over and over while we were on the diet. The only downside about this dish is that it doesn’t store very well, because it gets a bit runny. If you are planning to have this for lunch or leftovers, don’t cook the zucchini until you are ready to eat it.

          Directions
          1. In a skillet, cook the bacon until crispy.
          2. Crumble, then set aside.
          3. In the bacon grease, cook the spinach until it begins to wilt. (It should cook down to about ½ a cup.)
          4. Add zucchini, then cook until just tender—about 3–5 minutes. Be careful to not overcook, or it will get soggy.
          5. Add salt and pepper to desired taste.
          6. Divide between two bowls, then top with bacon, pine nuts, tomatoes, and ranch.
          7. Add a few dashed of red pepper flakes for a little heat.
          8. *We used Tessemae’s ranch.
