Whole30® Breakfast Pizza

Megan Ostler, Michelle Alley

TOTAL TIME:35 min

Pizza is an delicious choice of food for any meal...and our take on this breakfast pizza is really fun way to start the day. I love crispy hashbrowns for breakfast, so I knew a breakfast pizza with some crispy hash browns as the crust would create an amazing meal. The runny yolk is a must—it adds richness while the tomatoes and green onion keep it fresh and bright. This breakfast is a savory, filling dish that just happens to be gluten free and Whole30 compliant!

          Directions
          1. Preheat oven to 400°F.
          2. In a cast iron pan, cook the andouille sausage on medium heat, then set aside.
          3. Cook the bacon, then remove from pan, but do not drain the grease.
          4. Place the grated potatoes in the pan with the bacon grease, then flatten them out.
          5. When the potatoes are opaque, flip over then cook on the other side for an additional 3 minutes or until both sides are crispy.
          6. Top the pizza with the bacon and sausage, then make four wells.
          7. Crack the eggs inside of the wells.
          8. Place in the oven, then bake for about 15 minutes, or when the egg white is set, but the yolk is still runny.
          9. Top the pizza with the tomatoes, onions, salt, and pepper.
          10. Cut into fourths and enjoy warm!
