Whole30® Zuppa Toscana

One of the things I struggled with during the Whole30 diet was enjoying soup without grains. I love my soup to have rice or to enjoy it with crackers or bread. It was so hard for me to just sit down and enjoy a bowl of soup. This soup is one that I enjoyed even without the bread. It’s a creamy, dairy-free soup that’s incredibly filling and delicious. I added a little extra crushed red pepper to mine for a little kick. The best part is that this reheats really well, so it’s perfect for lunches.

          1. In a large stockpot, over medium-high heat, add the olive oil, onion, garlic, and sausage.
          2. Cook for about 5 minutes.
          3. Add the potatoes, broth, Italian seasoning, and fennel seed.
          4. Cook for about 20 minutes, or until the potatoes can be pierced with a fork.
          5. Add the kale, then cook for an additional 5 minutes.
          6. Before serving, stir in the coconut milk, red pepper, salt, and pepper.
          7. Save leftovers in the fridge, inside of an airtight container.
