
Chicken Scampi for Two
Ingredients
- 2 tablespoons butter
- ½ pound chicken breast, sliced
- 2 garlic cloves, minced
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- ½ yellow bell pepper, sliced
- ½ red onion, sliced
- 4 ounces angel hair pasta
- ½ cup low-sodium chicken broth
- 1 tablespoon white wine vinegar
- 2 tablespoons freshly squeezed lemon juice
- ¼ teaspoon Sriracha sauce
- ¼ cup fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- ¼ cup grated Parmesan cheese
Directions
- Brown butter for 2-3 minutes until it begins to turn golden brown. Add chicken, garlic, salt, and pepper. Cook for 5 minutes. Add peppers and onion.
- Continue to cook until chicken is cooked through and veggies are tender.
- Bring a separate pot of water to boil, and cook pasta according to package directions.
- Mix chicken broth, white wine vinegar, lemon juice, and Sriracha.
- Remove chicken and veggies from pan and deglaze with chicken broth mixture. Cook sauce for 5 more minutes.
- Add the chicken and veggies back in.
- Drain pasta, then and mix it in with the chicken and veggies. Add the basil and parsley. Heat on low for 10 more minutes to allow flavors to blend.
- Top with Parmesan cheese. Enjoy!
