Thai Veggie Patty

This veggie patty is so flavorful, you might want to eat it plain. I love veggie patties, because they are a quick, nutrient-loaded item that can easily be easily paired with bread, salad, over veggies, or eaten alone. This one is loaded with amazing Thai flavor, so I prefer to have it in a lettuce wrap, on a salad, or even on its own. As a mom, my favorite part is that these freeze well, so I make a full batch and keep them on hand for a quick meal.

          Directions
          1. In a large bowl, mix together the potato, red onion, garlic, cilantro, ginger, peanuts, and oat flour.
          2. In a small bowl, combine the flax meal and water, then set aside.
          3. Add the chickpeas to the food processor. Blend until some of it is a paste, but leave it so there are still some pieces.
          4. Add the chickpeas and flax meal “egg” to the sweet potato mixture and mix well.
          5. Prepare a pan with a silicone mat or cooking spray.
          6. Form the mixture into 10 patties and place in the freezer for at least 20 minutes.
          7. Preheat oven to 350°F. Bake for 35 minutes.
          8. Broil each side of the patty for about 3 minutes on each side. Watch carefully to avoid burning.
          9. Remove from oven and enjoy!
