Whole30® Smoked Salmon Pecan Salad

This salad feels light, but it’s full of healthy fats that will keep you full and satisfied. I love salads that have bold flavors—especially when they don’t even need dressings. I really enjoy topping mine with blueberries, sliced strawberries, and toasted pecans. This salad was my favorite meal while I was on the Whole30 diet, and I loved making enough so I could have it again as leftovers.

          Directions
          1. Preheat smoker to 375°F, or warm your grill to medium-high heat.
          2. Pat the salmon fillets dry with paper towels.
          3. Spread the ghee thinly over the 4 fillets.
          4. Mix together the salt, black pepper, garlic, smoked paprika, and dill.
          5. Sprinkle the spices on top of the ghee, then top with lemon juice.
          6. Place on the grill or in the smoker, skin-side down.
          7. Cook for 4 minutes, or until the skin is crispy.
          8. Flip, then cook for an additional 4 minutes, or until salmon flakes with a fork.
          9. While salmon is cooking, toss together the salad, green onions, pecans, and berries.
          10. Divide the salad into fourths, then top each with a salmon filet.
          11. Enjoy!
